Why is the restaurant called "Twelve Hours"?

The name "Twelve Hours" carries a dual meaning that reflects the heart and soul of our restaurant. First and foremost, it refers to the extensive time our kitchen team dedicates to preparing, cooking, and boiling our signature broths. This twelve-hour slow-cooking process is what gives our noodle soups their rich, deep, and complex flavors.

The second meaning behind our name is our daily operating schedule. We are open for twelve hours a day, ensuring that whether you are looking for a late lunch or an evening meal, our doors are open and our kitchen is ready to serve you.

This commitment to both time-intensive preparation and extended service hours demonstrates our dedication to providing the best possible dining experience. We believe that great food cannot be rushed, and our broths are a testament to the patience and care that goes into every bowl we serve.

The name also reflects a philosophy shared across many Asian culinary traditions, where slow-cooked broths are considered the foundation of exceptional noodle soups, requiring hours of careful simmering to extract the fullest flavors from bones, herbs, and spices.

What makes the noodle soups at Twelve Hours Boston special?

Our noodle soups stand out because of our twelve-hour broth preparation process, which is the cornerstone of our culinary philosophy. Unlike restaurants that use pre-made or quick-cook broths, we dedicate a full twelve hours to simmering our soup bases, allowing the ingredients to release their deepest flavors and create a rich, aromatic foundation for every bowl.

We offer thirteen different noodle soup varieties, each representing a distinct Asian culinary tradition. From the Vietnamese-inspired Pho Beef with sliced beef and bean sprouts to the Japanese Sakura Falls Ramen featuring braised pork and seaweed, and the Korean Oppa Noodle Soup with kimchi and steam tofu, every soup tells a unique story.

Each bowl comes complete with carefully selected toppings, a boiled egg, and our signature fried wonton skins that add a delightful crunch to every spoonful. We also offer specialty options like the Lava Cheese Explode and Tempura Green Ramen for guests who want to explore more adventurous flavors.

The quality of our ingredients, combined with the time-intensive cooking process and the variety of options available, makes our noodle soups a truly unique dining experience in the Boston area. Each bowl is crafted with care and served with pride.
